I'm gonna recommend Skies of Arcadia Legends, which is an enhanced port of the Dreamcast version with extra content and improved visuals.
Also, I'd try to hunt down some DK Bongos and Donkey Kong Jungle Beat (fairly inexpensive) which is a pretty fun and unique platformer. And if you enjoy rhythm games you can also pick up the Donkey Konga games while you're at it.

The graphics and framerate weren't as good on the PS2, and the Xbox version had a few sound glitches not present in the GCN version, if I remember correctly. Minor stuff, yes, but it makes a little bit of difference. The Xbox version is only a hair inferior to the GCN version, so if you find that one cheaper than on GCN, just get it for Xbox.

That Skies game looks awesome.
