I think Ben Heck makes several custom controllers for one-handed people. You could probably commission one from him.

I remember this topic coming up when I was active at GameFAQs, and it does seem like most of the time the best bet would be to stick with games with slower gameplay. Like RPG's and Strategy. I'm glad to see someone came up with a site like http://www.ablegamers.com/ though.
The only other option I could have thought of is emulation, while mapping the face buttons of most controllers to Insert, Home, Page Up, Delete, End, and Page Down, while using the arrow keys, or just using the whole numpad area.
I would hate to think anyone was limited to playing those slower genres, as I know it'd drive me crazy if that's all I could play. Also check out First Funky Fighter on M.A.M.E. Gory, but it's a cool whack-a-mole type thing that uses the numpad by default.
Edit: Just had a random thought, an alternative way to co-op even, what if you controlled one half of the controller and they controlled the other half?

What about arcade sticks? I don't know the extent of her situation but games meant for those, and even ones not, might be easier since you have bigger buttons to hit so you wouldn't need a hand/fingers to press them. One button games like sonic or space shooters or even beat em ups would be ok.
Then there's most lightgun games/wii style lightgun games like House of the Dead Overkill and Elebits. I haven't played either of those so I'm not 100%.
I'm pretty sure Player 2 in Sin and Punishment can be played one handed (it's just a cursor isn't it?).
Also Super Monkey Ball for Wii and possibly Mercury Meltdown (same concept).
