Uh, kinda. The 27C322 is 16-bit, so you can NOT use it for most SNES games. Though, you would have to use it for the few that have 16-bit mask ROMs (like Star Ocean or Mario RPG). For example, you can't use it to make a Secret of Mana 2 cart. Even though the game and EPROM are both 32Mbit, the EPROM is 16-bit while it has to be 8-bit. Yes, the 27C801 is great for 8Mbit games. You could also use it for 4Mbit games if you wanted to. I've done this once because I didn't have any 401's but had a lot of 801's on hand. Anyway, it's an 8-bit EPROM, so use it accordingly.
Yes, the 29F320 is the TSOP. 74LS139 is the 2-4 line decoder. You really only need it when you're using 3 or 4 EPROMs, you don't need it if you're only using 1 or 2. There's also the 74LS138 which will allow you to use 5 or 6 EPROMs. I think they're are more decoders that will allow you to use more EPROMs than that.
Not sure why you would need the 74LS245. Are you thinking you need it to use the 16-bit EPROM in place of an 8-bit? If you want to use the 27C322, just use the 29F320. It's 8-bit so you don't have to deal with unnecessary things.
Yes, the 27C322 can work on Genesis carts because the Genesis needs a 16-bit EPROM. But it's a 32Mbit EPROM, so you don't always need it. I would use it for 24Mbit and 32Mbit games. Use a 27C160 for 16Mbit games, a 27C800 for 8Mbit games, etc.
nesdev the forum? I don't know what you mean by that. But if you're talking about the website that calls itself "snesdev" than I do. I found a few diagrams on that site to be wrong. He also tells people to use Illusion of Time as a donor cart instead of using the real game. Anyway, I didn't know he had TSOP plans on his site.
