Castlevania and Double Dragon for me. I'd love to be able to beat Battletoads or Ninja Gaiden, but I don't think I have it in me. Mega Man courses through my veins so I don't really feel proud for having beat them.

In fact, I have never felt so pumped up after beating a game than I did Double Dragon. At about my 25th play through or so, I'm at the last boss again, on my last life. I get down to 1 health bar, basically one hit away from dying and having a game over, but I manage to stay up for the last 20-30 seconds it took for me to kill this guy. I just BARELY dodged one of his jump kicks. My heart was racing as I pumped my fist in the air to celebrate my victory. This was actually very recent...not even a year ago. I never get this feeling with new games, with all their checkpoints and save points (mind you, I wouldn't want to go back). The frustration of having to play 20-30 minutes of a game through over and over makes victory undeniably sweet.

I don't think I have too many NES accomplishments I can really be proud of.

Startropics I thought some of the caves in this game were very challenging

Mega Man I gave up on this game years ago because I could never beat the Yellow Devil. Also, it got annoying playing through all six robot masters over and over. I could beat almost all of them with the Plasma Cannon at that point. I finally decided to just bite the bullet and use the pause trick. Then the rest of the game was much more manageable.

Final Fantasy This game isn't ridiculously difficult, but I had to restart it at least six times due to having my game inadvertently erased. That got really annoying.

Rescue Rangers This game isn't very difficult, but it was the first one I ever beat. I was quite proud at the time.

I beat Zelda, but I didn't really consider it a huge accomplishment.

Ugh, the Yellow Devil. Fuck him. Everytime I hear that name, my back and legs shudder in horror. I actually beat him without the Thunder Beam pause Trick. I would've just used the glitch if I had known that it worked in the Anniversary Collection. :(

Off the top of my head - the more notable ones
Legend of Zelda:
No Sword First Quest - you can get to Ganon
Three Heart First Quest
No Sword Three Heart First Quest - I was working hootowl in a hotel and the office had a "broken" tv that I reappropriate from 3am to 5am.

Final Fantasy:
Four White Mages
One Black Belt
One Thief
One White Mage - ok so I only got to the bottle fairy, you do better.
(All FF1 challenges are much easier on the remakes)

Contra
Complete without Konami Code
Complete without Dying
Complete without Dying twice in a row

RC Proam
Completed the first 24 tracks - It loops and the opponents start at max speed

Mega Man 2
I beat the 8 Robot Masters - and I have the Tshirt to prove it

For the life of me I cannot beat Megaman 4 or 5 and I just get upset playing Zelda 2.

Mega Man(People always say the original was the hardest)
Double Dragon1-3(NES)
Teenage Mutant Ninja Turtles(NES)-Not the arcade port, the original
Mike Tyson's Punch Out
Zelda 2
Ninja Gaiden 1 & 2

That's all that comes to mind right now. I've played too many games

Finishing Ultima: Quest of the Avatar for NES is the 8 bit game i'm most proud of beating. There are harder games out there, but it took me over a year and 20 pages of notes, when I finally beat it the feeling was right up there with beating Tyson in Punch Out! and finding out that Samus is a girl.

With or without class change? If you managed to do it without, then you're my hero.

The only couple of games that I've beaten considered to be truly difficult are Battletoads, Ninja Gaiden, and Contra. Nothing else really reaches the level of these games for me. Of course, games like Castlevania I've played a ton, so I could just be experienced.

I did it with the class change. I got close once without, but it just so happened that that was one of the times I ran into the warmech by chance. I took a different job shortly after for unrelated reasons.

The only 2 I can recall that may be considered "difficult" would be Karnov and Dragon Warrior.
