Everybody is right to say now is the time to get all of them. I, myself, prefer the oXBox over all the last gen systems because of 720p and Xbox Live. But if you prefer RPG's then yes the PS2. But the 'Cube is a must. There are so many great exclusive games that are even cheap ...

It depends on what type of game you like. If you like nice graphics then the Xbox is the way to go since it received all the best looking ports of all the multi-platform titles. It has quite a lot of great fighting games that are cheap, it has the best FPS games and it has Forza Motorsport (in my opinion is better than GT4), plus all the sega arcade ports and a lot of cool exclusive titles like Stranger's Wrath, Panzer Dragoon Orta, Ninja Gaiden, Jade Empire, Star Wars KOTOR, Chronicles of Riddick, Conker's Bad Fur Day, PGR1&2, Crimson Skies, Steel Battalion, Amped 1 & 2, Gunvalkyrie, Brute Force, Voodoo Vince, Far Cry Instincts, Outrun 2 (I still feel it's the best version, it's flawless, especially when compared to slow down ridden PS2 C2C), Fable and Jet Set Radio Future.

That's a lot of games, and a lot of titles that will cost you next to nothing in the shops since it's not as sought after as the PS2 library is.

If you are looking for a lot of gaming for very cheap then the Xbox is the way to go, followed by the GameCube (console can be bought for around £15, and games never stray above £10 unless it's a rare/sought after game). The PS2 is an expensive console to buy still, but has the biggest and most varied library, however, some of the big titles can fetch upwards of £15 second hand.

It can get quite expensive, my PS2 collection is around 125 titles as of last count (plus a few recent additions, still waiting for my copy of GrimGrimoire though! ARG!), my Xbox collection (of which I consider having all the must have titles and the better ports of multi-platform games) sits around 45 games and is unlikely to shift anytime soon (the last game I bought for it was Crimson Skies several weeks ago). My GC collection is a measly 30 games and is unlikely to grow anytime soon until I get the money to buy Chibi-Robo and other rare titles for the system.
