My Father's Day went great! The baby and I just sat in the recliner and she dozed on my chest while I watched movies and played video games. As the day progressed, my wife made Lasagna and we watched robots demolish each other as ABC brought back BattleBots for the summer!

Yep, ground beef and Italian Sausage were indeed added to this concoction. Absolutely worth it! Best day ever!

First, everyone have a listen:

Second: The pasta sauce was a mirepoix mixed with a 28 oz can of tomato puree, a 16 oz can of fire roasted tomato, some garlic and herbs. Also had a mix of ricotta, an egg, and heavy cream. So it went:

Noodles
Sauce
Ricotta
Meat
Mozzarella

Repeat four times and top with fresh basil. Foil on the top at 400 for an hour, remove foil and broil for ten minutes.

I still prefer veggie lasagna...for now. I need to use meats like pancetta, and chuck steak beaten to be paper thin. Ground meats taste too "Stover's" to me if that makes sense. If I'm going to spend more than two hours on a dish, I want that food to be out of this world. No need for a flashback to cheap pre-made lasagna as it is a simple meal to make and usually pleases a crowd.

Chuck out your lasagna recipes in the "what are you eating" thread. I'd love to try 'em out.

Ingredients:



2 eggs

2 small boxes frozen spinach leaves, cooked and drained, squeezed dry

1 cup cottage cheese

2 cups homemade red sauce, or 1 jar store bought spaghetti sauce

6 lasagna noodles, cooked and drained

8 hard boiled eggs, sliced

1 lb mozzarella, grated

¼ cup bread crumbs

2 TBSP parmesan

2 TBSP butter

2 cloves garlic, diced

½ tsp rosemary



Directions:



Preheat oven to 350



In a mixing bowl, combine spinach, two raw eggs, and cottage cheese.
In an 11x7x2 pan, layer half of the pasta sauce, then three lasagna
noodles. Then half the spinach mix, half of the sliced boiled eggs
then half the grated mozzarella. Repeat. Combine garlic, bread crumbs
and butter. Sprinkle on top along with rosemary. Cover with foil and
bake for 35 minutes. Add parmesan, remove foil and cook for an
additional 10 minutes. Remove from oven, re-cover with foil, and let
sit for at least 5 minutes.

:lol: Tomatoes, carrots, onion, celery, garlic, and spinach, so not too many vegetables. And if you use pasta from a jar I would guess it would have even less veggies.

But you bring up a good point; my veggie lasagna isn't chock full of veggies. This is great because you put my gerbil on the wheel and I'm thinking of other possibilities. Throw out the red sauce and instead use a roasted garlic bechamel, with thinly slices porcini mushrooms, zuchinni, spaghetti squash, shallots, artichoke hearts, and fontina cheese.

To the kitchen!

You could easily make your noodles out of zucchini or squash with a potato peeler or a mandolin. I made lasagna that way a couple of weeks ago.
