Cooking friends, I've got a problem.

An asparagus problem.

I have so much asparagus.

Anyone got any ideas on a super-duper dish that uses a metric ton of the stuff?

Soup is a no brainer, but here's an idea:

Lasagna noodles (boiled 6-8 minutes)
Red sauce (crushed or diced tomatoes with a mirepoix)
Fontina or Mozerella
A few sliced hard boiled eggs
Sliced roasted asparagus (about 5 minutes at 350)
Sweet basil, red pepper flakes, Turkish oregano

Layer upon layer, bake at 325 for 40 minutes.

OR!

Boiled manicotti (6 minutes)
1/2 cup cottage cheese
asparagus (roasted and chopped)
1/2 cup shredded mozzarella

Stuff the manicotti with cheeses and asparagus, top with spaghetti or marinana sauce. Bake at 325 for a half hour. Top with Parmesan cheese and red pepper flakes.


Or!

As a side dish, arrange asparagus like you would a Lincoln log house. Sprinkle with olive oil and bake for fifteen minutes at 400. In a separate cast iron skillet bake shredded Parmesan cheese at 400 degrees for about twenty minutes until it forms a baked "web". Top the greens with the cheese.

Happy to help Nipple, and I'm sure you'll knock it out of the park.

A dash of balsamic vinegar to a red sauce does wonders, which I didn't mention. And if your canned tomatoes have that "canned taste" a small pinch of sugar will resolve that. So fun to make, and even better to eat. After all, lasagne means "layers" so go wherever your culinary mind speaks.

Not a fan of pasta? Screw you, but that is your choice to make. You can thinly slice eggplant, zuchinni, squash, kale, spinach, tomato slices, or even carrots for the "noodles". I actually prefer a veggie lasagne to one with meat.

Let's face it. The first person that made cake had the idea of "Let's make lasagne, but spongy and sweet...Possibly frosting".

I had authentic* ramen tonight, and it was delicious. The noodles cold and thick, but still bouncy. The broth had been cooking for at least five hours and had leeks, roasted bones, cuts of pork (mostly fatty cuts), garlic, mushroom, ginger, onion peels, and chicken.

Topped my broth with cooked pork, a poached egg, and scallions.


*at least authentic for Eastern NC.
