Made porkchop last night for dinner and the leftovers became sandwiches for lunch today. Breaded the chops in a homemade shake and bake - bunch of spices, bread crumbs, and curry powder. Give it a kiss of a shiracha sauce and they are awesome. Having them on wheat bread with alittle bree and some horseradish is heavenly.

Panko. Dude. Try Panko.

Lightly dust the pork chops in ap flour. Slap them around with Panko, s&p, sage, and rosemary. Roast at 425 for 20 minutes (depending on thickness) or saute those babies with a pat of butter.

Apple butter, or apple sauce as a side works miracles. Or any fresh sweat fruit works just as well.

I never fell in love with Panko like everyone else in the world apparently. I typically make my own breadcrumbs (when I am making bread) or just get them from the bakery when they are getting rid of them from their cutter. A couple spins in one of my food processors and I have the perfect powder to add spices to to coat meats.
