Depending on my party make up, I typically have a mix of scopes, armor, and medkits.
I don't think I use enough armor. I think I usually have 1 armor or arc, 2 grenades, 1-2 scopes, 1-2 midkits.
Yeah I usually use armor on the lower ranked guys for survivability.
My loadouts were usually having grenades on my assaults and heavies, scopes on my snipers, and medkits on my supports (with a secondary of grenades once I unlocked that class feature). If I needed the arc thrower I'd give it to an assault, as they were typically the ones in the front anyway.

Another thing that I found valuable was focusing my research on the armor suits that give evasion. The skeletal suit is an amazing early game armor; you get one less HP compared to carapace, but gain 10% evade and an extra 3 moves, plus a grappling hook. The grappling hook is fantastic for getting the high ground (which also buffs your evade and hit).

Most of my snipers have really high chance to hit except 1 of them. So I give them the health boost.

I give my heavies the scopes as without it their chance to hit is usually between 40-60%.

Assault gets arc thrower and armor if I have a 2nd.

Support gets medikits/scopes.

Skeleton armor is my current research.

I've been spending so much resources launching satellites, I really have been slacking on my research.

Satellites and research are mostly independent of one another right? Not seeing the correlation.

that I've been paying a lot of attention to building Power Stations, Workshops, Satellite Uplinks and Satellites, but I have been mostly ignoring researching shit and building new weapons.

I mean I just click a new research when the last finishes. It has no effect on building satellites unless you want to build a lab and I havent yet. Researching takes different resources than satellites.

yes, I understand this. What I am saying is that my own brain is focusing on one thing so much that it's ignoring another. This has nothing to do with resources within the game.

Does Enemy Unknown give you the option to immediately pick a new research topic after the notification, or was that only the original games? (by that I mean as part of the dialog, so it's harder to forget)

yeah when you scan for activity if a research project finishes it gives you the option to assign new research or to keep scanning. I've done a lot of ignoring research I guess because I'll often try to "hurry up" when I'm in the base. I really enjoy just getting back out on the battlefield, though that haste can often lead to my downfall.

Yeah it asks if you want to assign new research or carry on.
