I agree with some of your choices. Your RPG choices are something I can support, and your sports games are actually stuff I want to look into to try getting into those genres. As for fighting games...yeah, Street Fighter II is a safe bet. I'd actually recommend World Heroes around the same time too. It's not nearly as pretty, but it's so simple in its concepts that it is very easy to learn. I find I return to it a lot more often than SFII because it is so straightforward.
SHMUPS...yeah, that first level of Axelay served as a huge barrier for a long time, and Phalanx has never clicked for me. Surprisingly my entries into SNES SHMUPS were Super R-Type, Super Earth Defense Force, and UN Squadron. It's a genre I like but am terrible at.
Strategy is where I think you're a bit off, but that's because I see strategy RPGs and Strategy as entirely separate albeit related entities. As for a recommendation...I don't have one. I like strategy games, but they're also a nut that I have rarely been able to crack. I need to play more of them.
So my next question...what about beat 'em ups or racing games? I'd love to hear your thoughts there. Is it just Final Fight and Mario Kart, or do you think there are better places to begin?

I think I was just really excited about Shining Force II. I usually struggle with SRPGs but that one was so easy to get into, I knew what I was doing at all times and rarely felt overwhelmed. As opposed to stuff like Tactics Ogre or Der Langrisser or Front Mission where I'm like, "Uh... I think that's what I want to do? Maybe? Fuck it let's see what happens... oh crap I forgot [X]..." Beat Em Ups are so accessible, and there's a gazillion good choices (FF, Rushing Beat, Batman Returns, Turtles in Time, on and on), I don't think any one in particular stands out other than the very obvious. Front Mission 1 is pretty accessible. Give all your units missiles, stack them around the supply truck, kill everything with missiles, repeat.

As far as accessible strategy RPGs go, in addition to the aforementioned Front Mission and Treasure Hunter G, I'd say that Monstania and Tenchi Muyo! Game Hen fit the bill.
