Bought 2 cast iron skillets last week, and just made my first steak in one of them.

Goddamn, I will never eat steak prepared in a teflon pan ever again!...

This is the first time I was able to have a steak be raw and hot on the inside at the same time... ^^

And after you have cooked your steaks, flop in a chopped shallot, a half cup of red wine, and a dusting of flour if needed to thicken.
I'm not one to put anything but s&p on my steaks, but this wine sauce is easy and quite a mouthful of doozy.

I find that I forget things like ironing drapes or seasoning skillets if I don't have them tied to something else.

Thus, first day of my Christmas vacation is the day we season all of our pans for the next year. Cleaning w/hot water and dedicated brush after each use is all the maintenance required. If making grilled cheese or fried eggs, you can go a few uses w/o having to clean in between.

My 20" pan must weigh 15-17lbs. We have 8 total pans now and really don't use anything else. You can use them to bake in as well. I prefer Lodge Logic, but have a couple Bayou brand as well.

Cooking with that on a wood fire...well, you can't beat it when it comes to outdoor cooking. Speaking of, some of the best Lodge pans are only sold in the "outdoor" sections of retail stores.


Smile: Earlier I helped a close friend tidy his house. Laugh if you'd like, but cleaning up with a friend provides a lot of much needed "airing it out" time, and he had a lot to air out.

Been reading up quite a bit, yes...

I clean them with with water and a soft brush. Put them on a hot stove top for 2 minutes to dry. Then coat them with a thin layer of olive oil and put them on the hot stove for another 2 minutes. Wipe out excess oil -if any- and store them for next use...

I wonder if that is necessary if you coat it with a bit of oil after every use...

Mine are Victors. One 8" and one 10" skillet. Probably the cheapest ones one can find. But it got good reviews both on Amazon and elsewhere. So I really didn't find the need to buy a more expensive one...

Cast iron is virtually non-existent here in Belgium, so I ordered mine from the UK. Only ones I found where I live were from Le Creuset and cost over €100 a piece. Which is a total rip-off for a cast iron pan if you ask me. On top of that they had wooden handles, unlike the Victors I bought...

Still need to replace my wok. But I think I'd like that one to be coated with enamel on the inside. Seems like the better surface for a wok. I could be wrong though...

At retail prices, and even at wholesale prices Le Creuset is still expensive. They do make incredible cookware, but usually only a doctor and attorney can afford a full set (the Huxtables only seem to cook with Le Creuset). But their cookware is also usually enameled.

Now make a quiche you!

:( Crashed around noon. When I woke back up it was around 6:30-7. Hopefully I can get some sleep again tonight.

:( The damn NCAA! It's supposed to be The Big Bang Theory at 8 and Two and a Half Men at 8:30, but apparently some stupid-ass sport takes priority. God forbid they air this crap on a dedicated channel as God intended. But I guess ESPN is too good to air it.

:( Glee's going on ANOTHER hiatus. They just got back from a three-week hiatus a few weeks ago, and now they're going on another one. It seems like they always do this: air 3-5 episodes, go on hiatus for 3-4 weeks, and repeat until the final episodes of the season. And of course it's all because of American Idol. That and televised sports are the bane of television-viewing existence.

:D Been kicking ass in Sonic Unleashed, but sadly not enough. Though I do have one last temple to knock out.

:idea: I'd love to see a pair of hacks based on Sonic Unleashed. Sonic 1 would serve as the basis for the daytime levels, and a separate hack of Ristar could do the nighttime levels.

I like musicals. The Music Man is probably my favorite musical of all time. I love Meet Me In St. Louis, Bye Bye Birdie and I even tolerate Grease (but not Grease 2).
