I really like Mighty Final Fight for NES (or on on Capcom Mini Mix (GBA), which is the port I own these days).
As for the Arcade original, I was a poor kid and didn't get much cash to waste on arcades.
I think I remember renting the SNES Final Fight (on a friend's system) once and liking it well enough. I never ran across a good deal on Sega CD port (which is what I ended up owning in that era), so I never REALLY got into it back in the day.
Otherwise, an occasional playthough on Capcom Classics Collection is usually a fun time and you can't deny that the original arcade was pretty groundbreaking (or a good evolutionary step for beat-em-ups at the very least).
What do you think of Final Fight?

Re: What do you think of Final Fight?
I think it's fun, and have had some great times playing it multiplayer through emulation (I think we rented the Sega CD version once, too). That being said, I prefer many other beat-em-ups. As far as single player goes, I never liked Final Fight. I got into beat-em-ups for co-op multiplayer. Compared to playing Battle Toads, NARC, TMNT, Golden Axe, Knights of the Round, etc with my friends meant the home port was kinda crap... I still really enjoy Mighty Final Fight, but will probably never play through the original in single player.

As far as classic beat 'em ups go, I'll take the Final Fight series any day of the week over the overrated Streets of Rage series, and marginally over the Double Dragon series as well. The "feel" of Final Fight always felt tighter to me than its peers of the era.

Although final fight is fun, I vastly prefer streets of rage 1. That isn't to say streets of rage is the best in the genre, as tons out class it like the d&d games, the arcade golden axe 2 and much more!

Ah well I was thinking about home console stuff. The D&D arcade beat 'em ups were the best 2D games of the genre I'd ever played. (I think they did get Saturn releases but that might as well have not existed in my world at that time.)

Good for when it was released. That sums it up.
Stuff like Streets of Rage and the D&D games absolutely murder Final Fight.
It's ain't bad though. If you wanna see bad check out Burning Fight.

Re: What do you think of Final Fight?
Certainly not the best beat 'em up, ever (that's another discussion), but my absolute favorite, nostalgia-wise. It's the first arcade I'd buy if I bought one today. You can learn to get better over time if you put the effort into it. I think it doesn't get as much appreciation nowadays because of what it doesn't do compared to newer beat 'em ups, and that's a shame.
But the SNES version, while well-meaning, is butchered compared to the Sega CD and CPS-1 versions. No Guy, no 2 player, areas missing and WHERE IS POISON?! It was good enough for 6 year old me, but adult me prefers Poison, Guy, Sodom (not Katana) and Rolento.
I still love making Bred cry over his dinged up car.

Like most have said, when this came out, there was nothing like it. The graphics are still really pretty even today. My first cab had this in it. I sold the board later, never regretted it.
Poison ftw, no way she is a dude or even born as a dude. 100% hot femaleness.
I do feel that the 2 sequels on the snes do not improve the original at all.

Re: What do you think of Final Fight?
Is this a case where it's just a matter of what you happened to play first? I played FF first and friggin loved it, saw SoR later and was like "Oh, the Genesis version of Final Fight. That's cute." That series is obviously fine objectively but I'm always going to lean toward FF.
