All the years I've replayed this game and all the high level characters I've had and with all the combinations; I've only beat him with dumb luck.
Man, ive beaten Smithy so many times, when i was 10-11 years old, i would wake up every morning and watch Garfield and Friends, Sonic the Hedgehog, then beat Smithy.
Was like a ritual, i used Rock Candies and Fire/Ice Bombs, along with the Lazy Shell + Geno's special attacks (forget the name) hes a dead Smithy!
What about the two horse bosses in Breath of Fire III during your childhood? Is it possible to beat them? I know you do when you meet them later on, but can you kill them in the initial fight?

I think you need to differentiate "bosses that are literally unbeatable" from "bosses who are functionally unbeatable". The first category is for boss fights that are more of a playable scripted event. The second is for the ridiculously hard stuff like the true last boss of the most recent Cave games where there are a single digit number of players who have beat it on one credit.

In all fairness, this thread is a little silly...most bosses in video games are meant to be beaten. The ones that "can't" be beaten were clearly not designed to be.

But my question is more about what if a boss believed to be in the first category is actually in the second?
Take the first boss in Mega Man X, before you take on the MMX Master Robot equivalents. I've never beaten him, but I've heard it is possible, and if you do it then the game lets you skip ahead. Is this true, and what are other games where this is possible?

According to gamefaqs boards, it is impossible in Mega Man X (SNES), but he can be defeated in Maverick Hunter X (PSP).

To use the Super Metroid example, Ridley at the start can be "beaten", which means you deal enough damage to him to trigger him Mode 7 flying at the screen. Normally he does it when your energy gets too low, but a sufficiently skilled player can hit him enough times while dodging his attacks to force him to leave.
The Lufia games have a tradition of sending Gades at you early game to curb stomp you, but in every one he is beatable through a combination of level grinding and smart damage item use. Usually you get some powerful weapon for your trouble.
