I've been beating these games once a year since they came out and can say they get progressively easier. I still find the lava section of the sand crawler stage to be frustrating, and cloud city in Empire is also a doozy.
When given a chance to pick Chewie, I always do. His spin makes him temporarily invincible.
A few hints: If your character has full gun power, stick with him. Beating bosses with a puny blaster is near impossible in later stages. Also, when fighting the emperor, go nuts on him; the longer you fight him, the less floor you'll have and are more likely to die.

Yup. Oh! And in the later stages of ESB and ROTJ, before boss battles have levitation equipped. Even when using L&R to look up and down, some jumps are a total crap shoot and it's easier to float around than guess where the platform is.
Besides the lava level and Yellow scrolling text in the beginnings of the games (wtf was with that? I'm sure Blue was available) I love almost everything about the Super SW series. They're challenging, somewhat faithful to the films (especially the cut scenes), gorgeous, fun, provide great sound and atmosphere, and again, fun.

Return of the jedi was the only one I was able to beat without cheat codes. Actually I don't think I ever beat the first one....
