First game that comes to mind for me is Earthbound (also Majora's Mask). You see I missed it back in its time, and since then I've seen it go from "quirky obscure RPG" to "revered masterpiece RPG"... insofar as popular opinion is concerned. The trouble for me now is I worry I'll be disappointed when I play it, because my expectations have been set so high by the internet. (Then again maybe it'll blow my mind and I'll love it.) That's the chance you take with going back and playing renowned classics you missed. Earthbound is a timelessly amazing classic. It has not aged at all. This game will fill your expectations to the brim and then much more. But don't take my word for it, go play it! Well depends on what you consider a classic.
I don't finish games usually...idk why, I hate ending it?
Anyways mines a long list so I'll only do the well knowns.
NES:
Super Mario Bros 1 and 2
Contra - I just ended up getting a copy for the first time ever.
Metroid - Never owned it
LoZ
Castlevania
Megman (any of them) - Never owned it
Sega (i'm new to sega so...pretty much every game on it)
SNES:

I'v never played Earthbound as well. I'v seen videos on it and it looks fine, I even played a little in a SNES emu. There's another for my list. I never played Earthbound. Today I tried the first Metroid and the first Castlevania. My reviews?-
Metroid seemed like a series I 'could' really get into, but there are certain parts that were frustrating to no end, and if more of the game ended up like those parts idk if i could make myself finish it. I remember specifically certain rooms where the 'waver' enemies would make it next to impossible not to get hit by them.
Castlevania was my favorite of the two. I think my only complaint about it was the tiny amount of health items, and that one room right before the medusa boss where those medusa heads can knock you off the ledge and its instakill.
I'll definetly be finishing Castlevania and moving on with that series, Idk about Metroid though. Ive never claimed to be amazing at video games, and Metroid just seems so frustrating to me that im afraid id just be mad the whole time playing it.

I just saw a cabinet for this on Sunday at a vintage arcade exhibit and it reminded me that i've still never played through it. Definitely a classic that i'm looking forward to playing when i've got the time.And to continue with the topic, a great classic for me is Dragon's Lair.
I'm currently going through Earthbound for the first time as well and really enjoying it. I picked my copy up for $60 a little over a year ago. If it were a dollar more I probably wouldn't have picked it up. It's been a great game so far (and i'm sure it will continue to be) but it needs to do a lot more to justify the high prices it sells for these days (for me at least).
NinjatheGaiden is another series that i'd consider a classic. I went through a few months where I endlessly tried to beat the first game, only to die at the final boss each time. I've never experienced any other game in the series as a result.

For me, any of the Double Dragon's. I've came close on 1 & 2 for NES and Master System, but never could rise to the ocasion.
SimCITY is another one on SNES. Not quite sure if you can ever "beat" the game, but master it? Not even close.
I've never beaten any of the Sonic games either.

For me it's Final Fantasy VI and Chrono Trigger. I've owned the former since it came out (in 1993?) but never beat it because I'm can't find everyone in my party (Locke in particular) after the world gets destroyed. And I've owned Chrono Trigger on the DS but I've never finished that because I'm stuck on a boss that I can't seem to beat (the one at the top of the staircase in the dark).
