For me, I'd like to avoid emulation as much as possible. Not for purist reasons, but because I really can't get through a game by emulation, I just keep switching between games (unless its an unattainable game, I have to emulate).
So, I would go with:
-Retron 5 for NES, FC, SNES, SFC, Genesis, GB, GBC, GBA
-Wii for Wii, GCN, N64
-PS3 for PS1, PS2, PS3
This way you have every Nintendo System and Handheld up to the DS, a Genesis, and every Sony system.
P.S. N64 games will have to be emulated on the Wii, but other than that, no emulation.
Edit: Just saw your post. Take the Saturn, Wii U, and 360. Wiiware and XBL will give you more retro games than you can handle.

No, I know exactly how you feel. Like I said in my post, I don't really enjoy emulation unless its my only choice. I think the RETRON 5 would be perfect for you. Its not the original hardware, but you use the original carts and it has 9 systems. Or you could keep the snes and get RetroGen and RetroPort adaptors which allow you to play NES and Genesis on your SNES.
Those are your best options if you want to play as many systems as you can with only 3 consoles and no emulation.

If she's you're fiance and she loves you, and you're still taking care of responsibilities and not letting your collection get in the way of that; then why would she want to take something away from you that makes you happy?

Don't get me wrong, I'm not saying be an uncompromising asshole, I'm saying that as long as you are organized and not hoarding the whole damn house, she should let you enjoy your interests.

If you go through with it:
Powerful PC

All Nintendo consoles are pretty well emulated, except the 3DS Nothing a Wii can do that a PC can't.
Sega MS/MD emulation is great and the Dreamcast doesn't have many great exclusives anymore. Some Saturn games don't work well, but it's improving.
PS1 and PS2 are also well emulated, PSP is coming along. PS3 and PSV will cover the rest. PSV library + PSP library + PSP Homebrew is enough handheld goodness to last forever.
So, you'll only be missing out on 3DS, Xbox exclusives, and PS4 exclusives.
Maybe change that PS3 to PS4 if the Gaikai streaming actually turns out to be good.

Reading through I have to agree with some of the other people. I know your planning on getting hitched but maybe you should have found someone who likes gaming as much as you. Hard to do I know since most women don't like games...why I have no idea since they are so bloody epic.

Yeah, I found the controller to be the main issue.
