You should still be able to find official Nintendo and Sony brand component cables brand new. Just look for PS3 component cables for your PS2. They are the same cable.
As for the scart cables, I am actually looking for a good PS1 scart cable myself. I got one from an ebay seller and the brand is Piranha. I am not sure it is wired correctly as the sync was all distorted. I got that one based off of some random forum post where someone had a good experience with one. I am going to try it again with a sync cleaner when I get one in.

Are the same as the original official Sony PS1 RGB SCART cable.

And I know there's also an official GameCube SCART cable, but it's also a little pricy currently. Can't I just use the same SCART cable for SNES/N64?

Neither of those eBay cables say if they are wired for RGB. They may only be transmitting composite video. As for the GameCube, I don't know enough about the PAL versions to say for sure.

That PS1 cable shown is not SCART. It's wired for TVs sold in Japan.BitFaced wrote:

N64 lacks official RGB output, including Europe.
SNES uses a different RGB cable from the GameCube.

Just correct wiring for the system you want.
On top of that PAL SNES has different RGB cables from an NTSC SNES.
