I like 4p games, but not a fan of split or quad-split screens, so I prefer all 4p on one.
Gauntlet Legends being my favorite, a 4p all at once action/adventure hack and slash w/RPG elements.
I'll second the Pokemon Stadium 2 mini games, surprisingly very good.
The New Tetris is decent and 4p split screen isn't as bad for puzzle games as it is for FPS.
NFL Blitz 2001 is an absolute blast with 4 players.
Those games should cover all the major genres, in addition to what you already are planning on w/Goldeneye, Mario Kart, Mario Party and Smash Bros.

See I played it last night after not playing it for a few years, and I think it still holds up. The 1-player however, does have some very small levels compared to modern games. I found myself blitzing through half of the game in under an hour. Although that was on Agent. Yes but slightly. I enjoy Turok 2 more though, level designs are more my style. Turok 3 is like Quake 3. It is a nice change from the standard. Can't comment on Rage Wars...
