I really like Mirror's Edge. Not always a "shooter" in terms of combat mechanics, but it is first person. And a very good game.

I don't know how their respective Xbox versions are (I play my FPSes on the PC), but here's some FPSes I liked:

Quake III (Quake Arena Arcade on X360)
Quake IV
Orange Box (Half-Life 2, Episodes 1 &2, Portal, and Team Fortress 2)

Medal of Honor: Airborne is a criminally underrated fps on 360. I highly recommend it

If you want story based shooters, Bioshock 1&2, Red Dead Redemption (although this game is a GTA-style sandbox and not a true FPS game) and if you accept old Xbox games, Max Payne&The fall of Max Payne. And aint Half Life 2, HL2 episode 1 and 2 ported to the Xbox too? Naturally they are a lot more enjoyable on PC
