I'd suggest starting with IV myself, may as well work up from the bottom. I and III have very little in the way of story so you aren't missing much on that end. Honestly though, the Dissidia storyline is fan fic-tier at very best, I wouldn't worry about it. Also I found the story mode from the first Dissidia to be a lot funner.
I would suggest playing the original SNES version of VI. The GBA version suffers from slowdown from time to time, the audio is poor quality, and it's censored.

Ya the audio isn't quite as good, but I think having it mobile is worth it. There is the extra dungeon, and the graphics seem a bit sharper. I don't think I ever noticed the slowdown. Not saying it isnt there, but that it wasnt bad enough or an issue that affected my gameplay or caused me to notice.

I don't have 012, but I put about 350 hours into the first one (in study hall, on the bus, on the crapper...wherever I had 5 minutes) and loved it. There's a lot of awesome fanservice, but a lot of my friends love it and it's the only FF game they've played. Because the gameplay is awesome. You don't need an "excuse" to play it - if you enjoy the game, play it for that. It's a lot of fun to explore the game mechanics and create the most powerful fighter. Each character has several different play styles to experiment with. You can also play online with Ad-Hoc Party or X-Link Kai and that's a lot of fun. The fanservice comes in remixed music and in-jokes, and crazy matches like Cecil vs Tifa. Story is utter shlock.
As for my FF experience, I'm playing IV right now (PSX, best version IMO). I've also played V (Go for GBA version) and VI (SNES rom w/fan translation). VII, VIII, IX, X, and XII are good but it's mostly a celebration of the earlier games and it's really balanced for the older characters. But when I got it I had only played VII and VIII and really enjoyed it anyway!
Anyway...er...If you're trying to play every Final Fantasy game, that's a huge project. Just pick one that sounds interesting to you since they're all pretty good.

And I'm pretty apt at picking up "huge projects" like this. I get pretty OCD about playing every game in a series, even if the earlier ones are crap.
I also pick up and play between 5-15 games at any time, and often move on and come back at various intervals... It usually works itself out.
