Correct, they are a perfect fit for the N64 controller. I opened one up (an N64 controller) a while ago, and the base is the same for both the original and the replacement stick from what I can see on the picture...

You could replace that N64 stick with any controller joystick. I replaced my NGC joystick with a PS2 stick. I don't really like the ridges that are on the NGC stick. It just requires a little trimming but it's fairly easy.

That's because they both use the same type of joystick, they wouldn't be compatible with a first party N64 joystick though. That's why people use 3rd party N64 controllers so they can swap the sticks because a lot (or all?) 3rd party N64 controllers use the potentiometer type of joystick. First party N64 controllers use optics for the joystick.

Also, by the way, as far as I can tell:

NGC = Neo Geo Color (or is that NGPC?)
GCN = Nintendo Gamecube

Anyways, that's why I'm really curious to open up the new replacement N64 joysticks. I wanna see if they use optics, or maybe they use pots with some sort of conversion so the N64 controller can understand it. I'm also curious to see the quality of the parts.

And by the way, this guy built a little converter, just like I suggested before. Using it, you can retrofit a pot type joystick from any controller into a first party N64 controller. http://code.google.com/p/n64-joystick-translator/
