I can't find any screen shots of the arcade game in Super Scribblenauts, but here are the others:Flamepanter's examples were pretty good, but I'm familiar with none. Can you flesh them out a bit -- give titles/screenshots or anything?
Paddle War!
You can play this from the main menu (which is all done on Keen's wrist computer, just like the mini-game) or while pausing the main game. No explanation of the gameplay should really be necessary.

Beetle Mania!
This is a handheld videogame that exists in the gameworld of Super Mario RPG. It's a simple shooter you can play for a high score:

Eggman's Sonic Sim
This is played at the arcade planet in Sonic Colors. It's basically the same gameplay as the rest of the game, but with more spartan graphics. It's essentially the game's multi-player mode, and also functions as a set of single-player time attack challenge stages.
