They all work in Component. Some offer a higher resolution with the button load up combo. Yeah you can pick up PS2 component cables dirt cheap, I think mine cost about $5 or so on Amazon.
As far as plugging composite into component, I'm fairly certain that it would work, but you'd only get one color, or some other such strange thing. I have to wonder why you'd want to do that though, as presumably any TV with component in would have composite in.

I got my PS2 component cable off of monoprice for like $4. It was generic, but works perfect. Makes it look way better on a HDtv.

The PS3 still uses the same A/V port as the PS2, so finding the cables shouldn't be hard at all. I knew the PS3/PS2 was the same port, but didn't wanna pay big $ for a component cable just cuz the packaging said "PS3." I was able to nab one online for $5, which is fine even if it means I have to wait a few days.

Oh, I guess I'm too late. I was going to say you could just simply get the PS3 component cables and they work fine, these ones. Guess you saved 5 bucks though...
