My collection is primarily older death metal, like stuff from '84-'94 or so. Death, Autopsy, Obituary, Morbid Angel, Immolation, Massacre, Bolt Thrower, Atheist, etc etc. I love that stuff. Plenty of newer bands I like too, but I think that overall quality was more consistent in the genre's earlier years.

Death, Gammacide, Cryptic Slaughter, DRI, Merciless Death, Faith Healer...
I grew up on death metal and grindcore before I got into hardcore and punk and everything else I like now.
Suffocation, Impaled, Origin, Meshuggah, Buckshot Facelift, Cryptopsy, Human Bone Bicycle Science Industries, Internal Bleeding, Immolation, Nile.
Aaron, have to ever seen Dillinger live (when they were good)? One of the most intense shows I'd ever been to. The lead singer (original one) took a diarrhea dump all over the top of the PA speakers. He was sick and pissed off at the club manager. They killed it. This is all of course before they were an MTV band and played ridiculous patterns.
My good buddy/bandmate and fellow RB member (soniklife) works at Heavy Artillery records (punkcore RIP). They have some awesome bands on that label.
Oh.. and BOTCH is amazing.

I forgot to mention that I also LOVE pretty much everything that Devin Townsend has ever done.

I love Suffocation (everything except the most recent two albums), A good chunck of Nile's work, and early Cryptopsy too.

When I was a huge metal head snob I used to always name drop Atheist an no one would ever know what I was talking about. I'm glad someone finally does!
Seriously guys, if any of you have not heard Gammacide, you guys need to somehow find a way to listen to the "Victims of Science" LP right now. It's like the perfect blend of Thrash and Death. The "breakdowns" in Walking Plague and Fossilized are ridiculous.

Not yet. I've been out of the loop with metal for the past few years, with the exception of the west coast scene thrash scene.

Well personally I thought the new album was a big let down, but it seems to be pretty divisive so who knows.

Holy Diver and Rainbow in the Dark are unsaid exceptions

I've heard Mastodon several times as an opening act in various shows around Chicago and frankly I always thought they sounded terrible live, but I somewhat enjoyed a couple of their recorded songs.
On a side note, I'm also a huge Judas Priest fan as a guilty pleasure, and well I can appreciate death metal like Death and Vader for the instrumental music, I just don't enjoy listening that style of singing or anything like it for that matter. That's why I'm such a huge fan of bands like Iron Maiden and Black Sabbath.
