Literally throwing your fists and using your hair as helicopter blades in Rayman was pretty cool. Probably my favourite 2d platformer that i own.

Marios tail spin was also pretty good from mario 3 not sure if ive seen a racoon/plumber spin move in any other franchise.

I've always found Rayman to be funny, for instance where he beats the bug and it cries but they become allies I'm surprised Wario hasn't been mentioned yet, he is hilarious

Punching a naked guys clothes down from a tree so he could come out from a bush i allways thought was pretty funny but then i was about 12yrs old when i first played it.

Skullmonkeys had the greatest screen clearing weapon of any game ever: the Universe Enema. Klaymen would suddenly swell from this scrawny little fellow into this hulking bruiser for a moment when he announced he was using it. Classic.
