Kid Icarus is a game about jumping and shooting short range arrows. I think it would suck as a first person shooter, it might work as a 3D action game if they found a good way to do lock on targeting for the shooting (maybe take notes from a game like Gungrave).
And ultimately, it has to lead to you flying, and the flying level should feel really liberating.
I don't know, 2.5D seems like the best way to go in my opinion. And I agree with keeping it hard as hell.

and have you played zelda twilight princess? or ocarina? or windwaker? they were great examples of taking a 2D game and making it 3D ! Sure 2D is good but even sonic had a shining moment in 3D on the dreamcast? I personally hated mario 64 ive always enjoyed mario in 2D never in 3D. Sonic I perfer in 2D but love playing the dreamcast releases!
For you to rule out games going from 2D to 3D and claim that mario 64 is the be all to end all of 2D to 3D games is just stupid!
Was there some sort of easy mode on Kid Icarus? I ask because I loved the game when it first came out and I beat it, I believe without any hints. I'm not bragging because I'm generally not that good at games and there's no way I could have done that with Metroid. This was one of the reasons I liked the game so much. It was challenging but fair and a mortal could finish it without resorting to the Nintendo Fun Club Hint Line.

Considering Kid Icarus took heavy influence from Metroid for obvious reasons, I think 2D or 2D.5 would probably be the way to go. Metroid was always a better game in 2D. Castlevania is also a great example of 2D entries being superior to the 3D games. Metroid Prime was a great game, btu I could never see Kid Icarus succeeding as a open world FPS. Then again, Nintendo is known for pulling awesomeness out of their ass so who knowns.

Zelda: Ocarina of Time Metroid Prime Final Fantasy series ...and I for one loved Mega Man Legends. (and hey I liked DK64, I still can't figure out what's supposedly so bad about it. Liked it far more than DKC3 at least.)
3D Kid Icarus could work, but 2D would be preferable. We're sorta passed the age where every 2D franchise revival has to be in 3D, so I could see them keeping this game in the classic vein.
I never played much of the NES Kid Icarus, though oddly enough I owned the Game Boy one and played it off and on. Never did get very far.
