Rubber and body oils just react strange sometimes. I work in a lab and wear latex gloves all the time and wash my hands regularly. Some days my hands sweat and it reacts with the rubber and turns an ugly brown, sometimes it doesn't. I get student workers who see the same thing in their gloves and ask me why, I really don't know. Could be something I ate, could be the phase of the moon or the price of wool in china, who knows.
It would be nice if they made these grips out of silicone instead. That stuff lasts forever.

Apparently this is a pretty common occurrence for the Nunchucks and their cords, we have new ones sitting on the shelf at my job that have slightly yellowed analog sticks and cords.
