The two Tales of Destiny games might be good options in that even tho you need to get to a save point to save, they are pretty generous w/ save point locations, and the dungeons don't tend to be overly long (I don't think). Only problem, and this would probably be a problem w/ any RPG would be the cutscenes/dialogue scripts being long.
Just about any SRPG would also work fine b/c I think most or all of them allow you to save mid-battle.

While on the treadmill mindless random battles are awesome, and that is the only time I like them.

There just aren't that many RPGs that let you save anywhere. Certainly not on the PS1 beyond the Final Fantasy ports.

You could emulate NES games using ItMightBeNes or PNESx (can't remember which one is the best since it's been many years) or try out aGBe's Gameboy emulation. That would give you a large library of RPGs that let you save anywhere and would be really easy to control one handed. Also there's a gameshark code that allows FFVIII to save anywhere. As long as you don't use it during scripted game cutscenes it works perfectly.
