Just remember that you'll need a CRT TV to play gun games that use older style guns.
There are newer guns out there that will use infra-red markers (Wii-bar style), which is what you need if you want to play on newer flat panel LCD and Plasma TVs.

It also really depends on what you want kind of rail shooter you want to play. The look feel and pace of each game is a little different some are very quirky (snatcher, resident evil dead aim) and some are very straitforward (lethal enforcers).
The ps3 has time crisis 4, but that is it with no backwards support on that gun.
I don't know if the 360 even has a gun.
The wii is going to have all the new science. HOD 2/3 Overkill, Ghost squad, resident evil darkside Chronicles, Resident Evil: The Umbrella Chronicles, deadspace extraction. I'm sure there will be more quality titles on the way. If namco isn't a fool/under contract, i can see ports of some games doing really well. They also have a couple comming to the virtual console. Hogan's ally. Wild Gunman.
PS2/1 has all the namco games. Time crisis, Point blank. As well as some other cool games. Area 51, Elemental gearbolt, dinostalker, and resident evil dead aim just off the top of my head. Many more. PS2/1 can get a little confusing as to what gun you need to play each game though. Sega made a justifier for the ps1 and namco made a guncon, ps2 is guncon2. Some games will be backward compatible, meaning the guncon2 will work with a guncon1 game... but not all. I think Justifier games only work with the justifer gun. This kind of makes buying a ps2 light gun that is third party a little daunting as you are never sure what games will work with it and won't work. Most great games will, but the more obscure justifiers (if not all) probably won't.
xbox has a few, but none that really stand out. Silent scope complete has all 3 silent scope games, but they are kinda hard to play without the actual silent scope gun of the arcade. And they are certainly not really fast paced but rather based more on memorizing where each guy is going to be that you have to snipe.
Dreamcast has the sega games. I think that the only one you can't get for wii is confidential mission and death crimson ox
Saturn has a ton of more retro titles. Games that got ported from arcades back in the day. Area 51, Virtua cop 1/2, Scud.
Sega cd has a few, but they are pretty dated. Not in the good way. Lethal enforcers1/2. Snatcher is good, but you can play it with a pad and have the same experience.
and then everything older are pretty simple light gun games that everyone has played. Duck hunt. Super scope 6 games.

Namco had a contract with Sony for all their arcade titles for ages (as they all ran Sony hardware under the hood). I'd love to see some of the Time Crisis games hitting Wii. But we can only hope.
With that said, Sega are very Wii-friendly (as shown by Ghost Squad, HotD, and other non-lightgun-games). I'd hope they bring out Virtua Cop 3 and Rambo soon too.

I long for the day we get a home console port of HOTD 4. The Wii just won't do it justice in my opinion. Especially with all the dynamic lighting effects (your gun has a sort of torch effect) and the sheer amount of zombies on screen at once. Let's hope they put it on 360 or PS3. At least if it's on PS3 it'll give you another reason to get the Gcon3!
