Love Brie and Camembert, the crust and the cream filling. I have yet to sample Limburger though! :mrgreen:

He was only with us for eight months, but thats a big gap that appeared. Turns out he was in the beginning phases of a divorce, not actually divorced.

But on the upside, my neighbor built a bench from scrap wood, then discovered he miss-measured where it was going to go and it is too big. So I got a free bench. Mostly built out of 2x4s and 4x4s, but with a coat of marine poly it will look swell outside.

I'm lactose intolerant. My mother is a bit, and my grandfather was so bad, he used to eat his cereal with apple juice poured over it instead of milk.

Just a few tips: avoid milk. You may be able to eat smaller amounts of things like ice cream without too much discomfort. Same with cheese. I typically drink almond milk as a replacement for milk, but give Lactaid, soy milk, and almond milk all a try and see if you like any of them.

A lot of milk replacements are pretty darn tasty in my opinion. I used to have trouble eating almost anything due to ulcerative colitis with dairy being a big no-no. Even though I can handle it now I still like to get soy milk occasionally.

As you said, cheese is the big issue and is sometimes worth the suffering.

I had a college professor who daily ate pork rinds dipped in potted meat because "it's healthier than a slice of bread".

Wonder what he's up to these days.

He bragged about eating it because it lowered his cholesterol. Not his weight by any stretch, but cholesterol. But he never did say if it was HDL or LDL that was being lowered.

Potted meat may be the most disgusting food on the planet. I wouldn't feed it to my dog.

I don't eat dairy, and as it turns out I don't eat much gluten either (at least I don't think so), but I don't really have any good tips on how to eat creatively. I didn't try to find weird replacement foods for stuff I used to be able to eat, I just started eating different things. My grocery bill doubled, I guess that is a tip...be prepared for sticker shock.
