Making spaghetti sauce tonight for tomorrows dinner. Trying out a buddy's recipe that involves alot of garlic, a bevy of cheeses, and some vodka, plus it needs to sit in the fridge for 24 hours.

Let me know how that turns out. I've yet to have a red sauce with vodka that I enjoy.

All this pizza talk got me to thinking that I should make a pizza tonight. I'll make the usual foccacia but with honey and a shower of parmesan. Then I'll roast two heads of garlic, add that to a bechamel for the sauce and top the pizza with a mix of smoked gruyere, fontina, and basil from the garden. I love a delicious roasted garlic white pizza.

The menu for the rest of the week is pretty tame:

Cuban Sandwiches with seasoned black beans and coconut flan for dessert
Linguine with eggplant in a tarragon cream sauce
Avocado, egg, and spinach Tostadas
Prosciutto wrapped chicken marsala with rapini

Kale IS tasty.

We make our own kale chips by just throwing a bunch of it on a tray, adding a touch of olive oil and salt, and baking it off in the oven until crispy. Good stuff.

It cooked up fine, but we will see how it is tonight. Ive not had much luck with cooking with liquor. Baking yes, cooking no.

Tomorrow we are making a southern classic in Brunswick stew. It is a simple recipe, involving lots of cans. However next year we will be canning our tomatoes and hopefully the corn will grow so we can use that over the winter. It is just a good hearty meal for several dinners. One batch is dinner for two for three days, has three servings of vegetables in it, a serving of meat, and cost about $10 to make.

I love cooking with liquor, but not with vodka. It doesn't really anything other than a hint of vodka flavor, and vodka doesn't have a real "flavor" to it.

What cut of meat are you using for the Brunswick stew?

Misc Chicken Breast and BBQ beef from a local shop. While it sounds crazy it works well. My mother uses canned chicken (Tuna of the Land) and tub BBQ (Lloyds) from the grocery store and it is surprisingly good.

Vodka red sauce was a bust. I added triple the garlic and it still was soso at best.

But I discovered that our Food Lion has a surprisingly good selection of quality meat for cheap. We got good quality lean ground beef for about a dollar a pound, as opposed to our Krogers $1.75ish a pound

That stinks. Well, at least you know you can never go wrong with olive oil, a mirepoix, and crushed fresh tomatoes.

Be careful with Food Lion ground beef as they are known to bleach it. If you have a Kitchen-Aid, grinding your own beef is the way to go. If you don't have a Kitchen-Aid some stores will still grind a chuck roast for you (ask for a double grind). Packaged ground beef at our Food Lion runs at least $3.99 a lb., so good on you for finding such a great deal.

It takes some time and usually makes a mess, but you can't beat freshly ground beef from a nice chuck roast.

Our Food Lion franchise just had a major change of command for the Meat Department, so all the shady practices should be gone. Truth be told, I usually only shop at Kroger and if we eat a meat at home it is sheep, fish, or roast. As much as I love ground beef, we rarely buy it. I ended up at Food Lion since it is next to our Home Depot.

And you are the last person that should make that mistake. Kitchen Aid is a brand, not a product. I do have a stand mixer, two infact, a 4.5qt by Kitchen Aid and a 5qt by Hobart. Though I am trying to sell the Hobart right now. I need to buy the grinder attachment since we are about to get a bunch of venison from one of my sales reps. He told me to bring him my cooler and he will fill it up, when I gave it to him he laughed and said he will get me a real cooler... My cooler, while old, is a 40qt. Perfect for two people. I just hope what he considers a real cooler is not a 100+ qt one. I know you can get a 165qt one at Walmart, but I know that wont fit in my car.
