I'm not sure on the technically differences, but the PS3 version of both ME1 and 2 comes with a bunch of the DLC for free. Plus both of them run on the ME3 engine.
I am thinking about picking up Shadow Man for either the N64 or Dreamcast. The N64 seems to have received more critical acclaim, but I am having a hard time believing that it is better that the Dreamcast version.

Which one should I get?
I've only played the DC version but it seemed fine to me.
Let strength be granted, so the world might be mended...so the world might be mended.

I don't think so...All of the NES Classics I have played on my GBA look and sound great.
I just wonder if I should get that instead of NES/Famicom because it's not necessarily a portable game for me unless it has a password system, which it... Might, correct?
N64/NES/FC/SNES/SFC/GB (SGB)/GBC (Black)(SGB)/FDS/Satellaview/Genesis/Mega Drive/Master System & maybe N64DD/GBC/GBA.
What games are you thinking about getting? I have several of them, and I am happy to answer questions about any of the games in my collection.
Also, as far as I know, they are exactly like their NES counterparts. That is, if the NES version had a password system, the GBA version does too. Likewise, if the NES version saved, like Zelda and Zelda II, then the GBA version does too. (Zelda II is my favorite game in the NES Classics series BTW, and I highly recommend it even if you have the NES version.)

I know that graphically they're basically the same, as most multiplatform games are now. But what about the technical stuff like frame rate and such?
PC, always wins. Dragon's Dogma, PS3 wins. Why? Xbox 360 version has an extra disc for memory installation and better gameplay. PS3 is just once disc and has better hardware.
