I was actually trying to find some other horror themed platformer. Maybe it was for wii?
There's also that series involving a jack nicholson sounding alien that has a similar vibe to zombies ate my neighbors (1950s horror cheese). Can't remember the name.
And one of the timesplitters games had a horror themed level.

Mortal Kombat series - There have always been some horror elements
Buffy the Vampire Slayer (Xbox) and Buffy the Vampire Slayer Chaos Bleeds - Chaos Bleeds actually lets you play as a dummy
Devil May Cry series, and I guess Bayonetta too

^Lots of great examples there! I can't believe that Lollipop Chainsaw completely slipped my mind like that.
I thought about bringing up Mortal Kombat, but the series as a whole is pretty inconsistent with how seriously it takes itself. I'd say that MK2 and 3 are pretty goofy all around though.
I think the Castlevania example you mentioned however is more of a case of simply having a bit of comic relief, which kinda falls into the same category to me as stuff like the Silent Hill joke endings.

I don't know how good they are, but there's also Voodoo Vince, Grabbed by the Ghoulies and Stubbs the Zombie on Xbox.
I will say that despite it being listed here a couple of times, there isn't really a horror overtone at all in Grim Fandango. Yes you're a grim reaper and you partner is a demon, but it's never even played for comic style horror, the film noir style is much much much more prevalent.
