Trackmania is an excellent game for passing since most tracks don't take much more than a minute to do a run on, and since it's time trials, it's fun to hotseat and see who can get the best time. Most Mario and Sonic games are good as well.

I've never co-opped to beat an offline game together with any one, but the Worms games are great competitive fun. Since they are turn based, you can play multiplayer with a single controller.
If any one here is a fan of the Worms' games, I recommend checking out Liero. It's an old freeware DOS game where 2 worms fight against each other (split screen offline 1v1, but there's also online multiplayer IIRC) using various weapons and gadgets, except it's in real time so it plays more like Soldat than Worms. It looks primitive but it's a lot of fun, and there's a bunch of mods for it.

Any sandbox game, really. Every time my friend comes over, we play Just Cause 2 and Saints' Row 2 this way, and it always creates hilarity.

Sadly, I only have the Dreamcast Racing Controller, which has these flaps behind the steering wheel in lieu of pedals.
