I didn't game at all during college (actually I didn't touch a video game between 2001 and 2009) and now I regret that. I doubt I would have brought a console to college, but it would have been a great time to get into PC and handheld gaming.

When i went to college back in 2005 i took with me my Snes, Dreamcast, PS2, and DS lite.
My roomies and i had countless matches on tekken,3rd strike, soul calibur, etc....
My suggestion this gen i would take a PS3 ( next gen console), Genesis or Snes (for retro) and a handheld ( iphone/ds/3ds)

oh yeah a dreamcast is also a great choice, tons of multiplayer games and you can just bring burned copies so you dont have to worry about theft or breaking them when your in a drunken stupor. power stone 2 is one of the most fun games to play when drunk.

Throughout all of my college years, my favorite thing to bring was my Nintendo 64. It does depend on what you plan to be doing in your downtime though. My college downtime was filled with lots of drinking and parties...
Also, I wouldn't worry so much about your stuff getting stolen so long as you and your roommate(s) lock your door whenever you aren't in your room, and you trust the people that you have in your room. Also, if you notice stuff is stolen the morning after, don't hesitate to start knocking on doors and flipping out.

Just to add in my opinion, I'd go with a modded Oxbox as mentioned before. A buddy of mine had one and it got used a lot. Playing Halo 1/2 on the dorm's LAN against other rooms made for some good times, and a healthy bit of competition, although I'm sure most campuses have moved onto the newest one (4?).
Personally, I brought my PS2 but it rarely got used, except for when me and my roommate played through MGS2 and sat there wondering what the shit was going on with the story.
My laptop got used heavily though once I loaded it down with emulators. Got a couple of PS2 to USB adapters and was good to go. Really, any option that eliminates the need for carts/dvds is the way to go. As most of the dorms I've been to tend to be on the small side.
