Which version is the one to buy?
I know the Legend of Zelda 4-game Promo Disc would be great to have for collecting purposes, but which version is the best to buy if I just want to play the game? Are there any differences between these two versions?

Best thing to get is just buy them on the n64. Preferrably the gold cart for OOT...
...but if you're just asking between Wii and Gamecube releases, well... I think the wii version of OOT is more or less identical to the gamecube one. Majora's Mask on the gamecube had a lot of slowdown and was prone to crashing, I don't know if the VC version fixes these problems or not.

Is that so? I've heard that the emulation of Majora's Mask is much better on VC than the collectors disc, but OoT is pretty good on both. Don't forget there's also the pre-order bonus disc from wind waker which has both Ocarina of Time and Master Quest on it. That one also has decent emulation from my experience of master quest.

These also have slightly improved framerates compared to the N64 versions, it's the only way I've gone back and replayed OoT actually over the last several years. Only downside is the C-stick isn't amazing to use for the Ocarina compared to the C-buttons.
Both are slightly hard to find now though, but yeah pick them up if you can.

Pretty sure they both run at a slightly higher resolution thanks to some emulation quirks too. It's a small, but nice bonus.

Unless you have one of the early Game Cubes with digital out. The Wii VC has component output.

Would there be any difference if your Wii is hooked up via component already though? I'm hoping the GC releases of these games look fine that way. I was replaying OoT earlier this year, but only had AV cables through my Cube on my HDTV and it just looked horrible so I stopped playing, lol.
