I actually liked Bebop more for that. There were six sort of main episodes which had an overarching plot, but the rest of the episodes were really interesting vignettes. Somehow that struck a great balance for me.

listing only series, not movies.

I enjoyed watching:

Cowboy Bebop
Samurai Champloo
Full Metal Alchemist
Sailor Moon
Pokemon
Sands of Destruction
Gantz
Big-O
Love Hina (lol)
Orphen
Dragon Ball Z
Tri-Gun
Gargoyles (pretty sure this is western animation, but it's so good)
Avatar The Last Airbender (same as above, although im pretty sure it was animated in south korea)

cant think of anything else, and sorry if most of it is too mainstream for some you hipsters!

I don't really care so much about what is or isn't mainstream, just what's good. When it comes to anime, I'm mostly familiar with the old classics. Here are the ones I recommend:

Rurouni Kenshin(as well as the Samurai X prequels, Trust and Betrayal)
Tenchi Muyo OVA(which is like Love Hina, but much better) - The orginal OVA is the best of the various Tenchi series
Ranma 1/2
Inuyasha
Gunsmith Cats
Record of Lodoss War OAV
Slayers - Every season is cool, and you have to check out the movies too so you get to see the awesome character Naga. I'm currently watching Slayers Revolution and it's great
Oh My Goddess OVA - If you like a touching love story
Escaflowne
Just about anything with the name Gundam in it
Berserk

Some people consider Neon Genesis Evangelion and Lain to be classics, but I never liked those overly cerebral shows. They're kind of pretentious

For Western animation:
Batman the Animated Series - Then watch ever other show that was spun off of its continuity until you reach Justice League Unlimited, which was probably the best of all those shows

Thumbs up for mentioning Gargoyles, that is one of the best animated shows of all time. Easily on par with some of the best stuff to come out of Japan and probably better than any other series Disney ever made

I actually didn't mind the newer Gundam 00. Once you get past pretty-boy character design - it's fairly decent.

I'm still partial to G Gundam and Gundam Wing though.

I think you'd like Code Geass and Death Note. Also, I have to say check out Spice and Wolf.
I feel old when talking to anyone my age yet too inexperienced to effectively talk to anyone older. Life is grand that way.

Ah, worst one you could've started with. :roll:

Hated 00 myself. These two are extremely preachy with the most one dimensional characters imaginable.

I like the older installments like Zeta myself a lot more, then G for the sheer manliness (DBZ with mech's basically), X had awesome characters, and Turn A isn't too bad, really weird though.
