Amon Amarth is indeed awesome! I'm glad All That Remains are amazing live. I'm going to see them along with Five Finger Death Punch and Hatebreed in October.

Great, I'm not alone. It's always funny to say "I'll be back tomorrow morning, I'm going to AA." So now my ex girlfriend thinks I'm an alcoholic. Heh.

I think I brought him up before but I really like Vinnie Moore's stuff. Not really heavy (if you're looking for death instrumental or something lol) but still metal enough. I'm not into shred like I used to be, but I think this guy has a nice videogame-esque melodic style... if I can say that, lol.

These two are the end of one album, they go together really well:

*Sounds like you just beat Blaster Master, Mega Man, or some really badass game.

I would say Theater of Tragedy is the better band, but outside of maybe a bit of My Dying Bride I've never been too into the whole Gothic Metal thing anyhow.
Leaves' Eyes put out a new album this year called Meredead. Their last album was a bit hit and miss for me with a few songs I loved and some I was kind of neutral on, but this new one has been much more consistent for me personally. I love most of the tracks. Here are some samples:

Wow, I am now a fan. I've been going through their stuff and they are great. Their sound is so unique, something like this is pretty much exactly what I was looking for.

Vinnie Moore is pretty good but I'm just burnt out on neo-classical and shred stuff these days. I used to listen to that stuff like crazy when I was really into playing guitar so I think I just made myself sick of it. Kind of like you and power metal maybe.

Glad you like it!

They've got a new album coming out I think in November called "In Somniphobia". You might want to check it out when it drops.

Haha, well how about some Mastery? They recorded this thrash EP and couldn't find a vocalist so it's just instrumental, but it still works and kicks ass, I guess if you dig thrash:

Nice. 8)

That album is definitely a bit less on the shred/neo-classical Malmsteen stuff compared to the other tracks I posted above from other albums. "The Maze" is just really soothing melodic stuff. Greatness.
