I agree with you, except that VGA actually uses an analog signal. For the PS2 ports of Code Veronica and DOA 2, they look softer in comparison with a the digital VGA signal and AA.
Actually, I was very disappointed find that some PS2 games look a lot worse over component cables compared to composite cables. "Yay! Now I can actually see all the ugly dots the hardware is using to dither the gradients of shading!" Damn but that gets hideous. Dreamcast games have always looked smooth but crisp to me.
