Jackal on the NES is a great one. A lot like Commando and Ikari Warriors but with Jeeps.

In terms of beat-em-ups, if you don't mind emulating on any of these systems, you can't go wrong with the Simpsons Arcade Game. My whole family can really get into this one, even if they usually never play games in general.

I second Contra as well, and good luck with beating Battletoads on co-op. :lol:

Edit: the Donkey Kong Country games on the SNES have co-op, though I don't remember if you can play at the same time or not.
