Sure we all have boss battles we don't look forward to (The pirate girl in Eternal Sonata XD), but there must be a boss battle you not only looked forward to, but also extended on purpose because you loved the fight so much XD
Mine was definitely The fight between Sonic and Knuckles in Sonic 3 and Knuckles XD uber fun, and easy, but it was sooo fun to play XD

me pretty much all the bosses on Metal Gear Solid Snake Eater. The boesses were all unique with very predictable attack, yet easy to read patterns which made it enjoyable to try out different methods of taking them down.

I can't think of any off the top of my head, but it's always enjoyable when boss battles drag out a little bit, so long as it's not simple repetition. I get disappointed when final boss battles are too easy, à la Abadox or Fable II, although at least with Abadox it takes a few tries to figure out how to do it the easy way. ;)

I've always savored the final boss of Chrono Trigger. It's so weird towards the end, and fun at the same time. And pleasingly difficult. Not a complete cakewalk, but not frustratingly hard either. It's my favorite sequence in the game.

Sephiroth boss fight in Kingdom Hearts 2. Most fun I've had with that game. Wish I had a save file right before the fight.

I feel like I power leveled a bit too much on my recent run of FFIV (PSP) before Zeromus just because the fight is so epic, challenging, the music rocks, etc and I kind of didn't want it to end. Haha.
