My PS2 with component set at 480p on my Son's Vizio LCD did the same thing, a Dot Crawl Lag issue. Strange that the HDMI connection runs fine with his PS3 though. First off, I have Nintendo brand component cables, so I'd really hope that they're properly shielded and all that. When I first hooked them up, I switched it to 480p and it seemed fine. Then, it would occasionally start doing this skipping/freezing thing. Periodically, the image on the TV would very slightly jumble and freeze for a few seconds, while the audio continued, and then go back to normal. It started to do it more and more often. It would do it with Wii games, Gamecube games, Photo Channel, anything. It started to do it often, so I had to switch.
I kept the component cables on, but switched back to 480i. This way, I don't get the image freezing any more. Everything seems to work fine except for one thing, Virtual Console games. Playing VC games with component cables in 480i, my TV will some times loose the signal. My TV will actually display the "no input signal" message like the Wii is off. I'll have to switch to another input, then switch back to the Wii to get the picture back. It only does this for VC games though.
I assumed the problem is just that my TV doesn't like the component signal from the Wii for whatever reason, and I kinda left it at that. Recently, some one was trying to help me diagnose the problem via PM, but I haven't had much spare time lately. I haven't had the chance to mess around with it.

I have no idea. Gotta be something the way the Wii sends the signal, HDTV not transposing the Wii Component signal at a good refresh rate? A shot in the dark, Maybe the Wii has more frames per second compared to the PS2 at 480p. The LCD not keeping up with the draw rate of the Wii faster frame rates? In the case of my son's LCD something about Component compared to HDMI. The PS3 HDMI at 720p had no lag compared to the PS2 Component at 480p. Its not the PS2, runs great on a HD CRT at 480p.

I'd say the issue is definitely in the TV refreshing the picture.
