I'm surprised to say that I've tried every genre and subgenre mentioned here so far to a decent extent besides MMORPGs. I used to play this MMOFPS called PlanetSide for about a month, but after my free month was up I didn't have any interest in continuing. MMORPGs just seem completely unappealing to me in every way. Nothing else comes to mind though.

I've never played any wrestling, simulation (Other than Sim City 2000), dancing, exercise, or sports games. To my knowledge I've tried every other genre.
I feel old when talking to anyone my age yet too inexperienced to effectively talk to anyone older. Life is grand that way.

Honestly I'm pretty sure I've tried everything at least once. Now whether I liked it enough to stick around, that varies a bit.

Railroad games/Tycoon games: I liked SimCity (the original on the SNES), so I might pick up one of these one day, but they're generally not my thing.
Visual Novels: Until Digital: A Love Story, I had never touched a visual novel game, and although I liked Digital enough, what I've seen with the other ones I don't think I'd get into them at all. Guess it helps that I've never been a fan of anime.
Music Games: I've never played "Guitar Hero" or any of those games except when pretty much forced to. (When on a date once, and when I got back to her house, she only wanted to play Rock Band...I never saw her again.) I never understood their appeal at all.
Card Battle Games: I can't imagine this being any fun at all.
Exercise Games: I don't own a Wii, and there's so much better on the Wii that I can't understand why someone would just want to exercise with it... Go outside and run!

MMORPG- never tried and prolly never will, just doesn't appeal
survival/horror- parenting is scary enough, why would i want to subject myself to further horror while trying to unwind???
flight sim - haven't ever played one if pilotwings doesn't count
point and click - to slow for me, but have Zach & Wiki for Wii

Other than MMORPG and sports I think I have played every genre. Not much but I at least tried.

Now dying craze? Guitar Hero isn't the whole genre you knowdsheinem wrote: I don't know, I can't explain it very well - I just don't et this now-dying craze at all.

The two that come to mind are MMORPGs and Hidden Object games. I don't think I'm missing much.

I've played two Rogue-Likes(one series) and fucking loved them, as you can see in my original post. Never did sports, not going to start.
