Kabuki Klash and Waku Waku 7 immediately come to mind.

I liked fighting vipers a lot.
I just want to separate the cereal from the mouse mask.

My personal favorite has already been mentioned, Cyberbots, but I'm a little surprised the most obvious choice hasn't been mentioned: none of the Virtua Fighters saw release on the Neo Geo. Also, Groove On Fight didn't appear on the Neo Geo, though Matrimelee did.

The World Heroes games were also by Alpha Denshi, though SNK helped publish them for the Neo Geo. Console ports were handled by other companies, like Takara.

And Sunsoft also created Galaxy Fight alongside Waku Waku 7.

Then there's the aforementioned Matrimelee, which was by Atlus.

Also, should I bother getting Street Fighter Zero 3, or is it the exact same on the Dreamcast (as Alpha 3), just cheaper?

They look different, the Saturn one has larger sprites if I recall, though I have never played it.

Dreamcast has more play modes as well.
But the Saturn is a bit more solid on the basic stuff. You might also want to make your decision based on the controllers as well.

I remember the Saturn version being closer to the arcade, and the Dreamcast version having more extra features. I preferred the Saturn version overall. It's been a long time since I played either one though.

Zero 3 on the Saturn runs at the same resolution as the arcade, and controls flawlessly as a result. The DC version runs at a different resolution, and apparently this affects the button response time slightly; thereby affecting the ease of pulling off some of the tougher combos. So, the Saturn version is arcade perfect, while the DC version is slightly off. Also, if you prefer control pads over arcade sticks, the Saturn pad cannot be beat.

Capcom fighters are absolutely brilliant on the Saturn.
