Swapping discs is the least of my worries when it comes to a new console. In fact, throughout console history, more often than not, storage space limitations have forced developers to focus more on quality of content rather than quantity. Having more space tends to just encourage devs to just throw in filler material that is often so boring that it completely halts my progress in the game, and then I never finish it.
Of course this is not always the case. Metal Gear Solid used the space to give us a ton of voice acting, all of which was skippable if you are the impatient type. Panzer Dragoon Saga however was 4 discs, yet my average play-through time on that game was always around 13 hours. That game had no filler at all. It was just one fantastic, engaging ride. So I guess my statement above doesn't always apply.

I wonder how much less a PS3 could be if it didn't have all the other junk packed in? Even at $500 it's beyond consideration for me and I'll never consider getting the lesser model because I need PS2 and PS1 compatability.

Damn straight. Ever since Half-Life 2, I've become tired of the FMV, hell, the cutscene as well. Why the hell should I stop playing my game so I can watch some 5/10 minute movie to advance some half baked plot when I can just play the game and watch what's going on through my character's eyes? An opening cutscene is about all I can stand now.

Why? Where did you get that info from? I don't care how epic the game is; how long; how many detailed worlds with mega-textures or whatever the fuck. When you take out FMVs, the data just cant break 9GB unless the developer didn't know what the hell they were doing. I for one can't think of a single PC game that comes close to 9GB once I exclude the FMV folder or FMV archive file. Look at Crysis or UT3. Do you seriously think PS3 will go so far beyond these games in terms of visuals?
If they make the same quality as cutscenes with an in game renderer, and allow that level of graphics throughout the game, it'll definitely go past 9GB.

It takes more data to render something in real time than to have it pre-rendered and stored on the disc.

No, it does not. High Def video resolutions use crazy high bitrates. A realtime cutscene however simply has an audio track, and uses the existing graphics already on the disc. There's been countless examples of this fact throughout the 5th, 6th, and 7th generations of consoles. Where have you been?
