I know you dont use a sports category, but I would nominate
Mutant League Football and Mutant League Hockey.
When i sold my original genesis and all its games I strongly considered keeping those two.
They weren't the deepest games but they were a lot of fun to play and the embodiment of pick up and play sports titles.
Most people rave about Tecmo Bowl, but for me it will always be Mutant League.

I always thought star flight was a pretty fun game wasted a lot time on that one

Another game i forgot to mention.
TMNT the Hyperstone Hiest.
Everyone remembers turtles in time, but this gem rarely gets remembered even though it was also a good turtles beat em up. It was similar to Turtles in time, but it had its own unique feel.

- the characters are adorable
I'll also second the nomination of StarFlight. It's like Star Control, if it were an RPG. And open-world. As deep as any Genesis game ever got.
