I recommend that you get at least a 500 GB hard drive. If you're going to use the XBOX for a media center you'll fill up your hard drive space quickly.
By the way, why the hard mod? You can do nearly everything with soft modding now, and it's a lot easier. Is there an advantage to hard modding I don't see?

Swapping the HDD is alot easier with a chip, also the xbox will take all usb sticks (with a converter) once the bios is changed

I'm too interested in this, since every one always tells me the oXbox is the best console for emulation.

I'm not sure that it's really necessary to get that chip. I personally use the DUO X2 chip which you can get for $15.

I think the ability to have multiple BIOSes were useful back when the oXbox was in active production. It does have the advantage of a built-in ftp server.
For the DUO X2 chip, I immediately installed the dashboard of my choice from CD/DVD which has the ftp server (e.g, xbmc, evolution x, unleashx).

I have a box with an Xecuter3 and a soft modded box. There's nothing worth doing that you can't do with the soft modded box. If you're interested in development, it might be worth chipping it, but for an end user don't bother.
Just look up Auto Installer Deluxe, it comes with Softmod Installer Deluxe which can exploit any version of the Xbox. There's a great wiki with detailed instructions.

Does anyone know of a reliable hard drive to use? I'm interested in soft modding the xbox too, i just don't have the time or a hard drive... Best/Largest/Cheapest

AFAIK, any IDE drive will do. The model of the hdd only matters if you want to lock it, which only matters if you're still going to do xbox live, but there's not much point in that anymore IMO. You can even use an SATA drive with an appropriate adaptor. That might be a tight fit though.
