So far I have experienced the following:
Ultra lame grenade throwing and decent balancing - Uncharted
Shaking like I am having seizures - Resistance Fall of Man
Laggy steering that quickly got changed back to the joystick- Motorstorm
Weak "puppeteering" - MGS4
What do you guys suggest? More interested in retail games, but will check out PSN games as well.

just kidding stay far away from that one, Rachet and Clank Future: Tools of Destruction has pretty good ones when you have to solve some hacking puzzles and free falling sections

I played the demo for Mirror's Edge recently and it used the motion controls for balancing when you need to walk across a thin rope to get to the next building. I fell and died a few times before I made it across. It didn't seem to work as well as I would have liked.

steering arrows and catapult projectiles in Heavenly Sword worked well and was fun for a while - although it was MORE fun without the sixaxis use...

Pretty good game is Folklore. I'm pretty sure some people haven't forgot about it and like it like I do. You pummel your enemies, then grab their aura, and flick the controller up to absorb them, which give you their unique attack. In bosses, when you wanna absorb them, you deplete their health, and when you grab their aura, you kind of rodeo it. You might not like it though, as I felt it would've done better as a PS2 title, but I still like it. It's kind of a beloved PS3 launch title for me, because of the memories I have of playing it.
Edit- Then again, yeah, Flower is the best game for Sixasis.
