Puzzle Quest: Challenge of the Warlords is incredibly addicting. It's a role playing game that uses a match-3 puzzle (like Bejeweled) for a battle system. It combines the geekiest elements of RPGs with the most casual of puzzle games into a magic recipe of awesome.

I'll need to second (third?) Castlevania Dracula X Chronicles. This is a much for any Castlevania fan, as it has the best of both worlds. Two versions of Chi no Rondo for the classic Castlevania fan and also Symphony of the Night for the metroidvania fan.

A couple not mentioned:

Burnout Legends - fun just like any other burnout game
Exit - best puzzle game on psp, level 80 to 100 seem impossible
Killzone Liberation - great single player and multiplayer, very glad they didn't do an fps the result was a good portable game
Metal Gear Acid - only if you love the metal gear sagas, card games and strategy games
Monster Hunter - the hours you can get out of it is well worth any price, I'm over 500 and counting
Space Invaders Extreme - prefer it over the ds version
Syphon Filter - great controls
Wipeout - its wipeout
WRC - if you are a fan, also try collin macrae

The port of Street Fighter Alpha 3 was pretty good I thought

Lately I've been playing a lot of Rock Band Unplugged. It's like Frequency or Amplitude that Harmonix made before Guitar Hero.

I had a lot of fun with Yggdra Union. It's a nice change from your standard tactical RPG.

I can't believe nobody has mentioned Ace Combat X, pretty good air combat game from the series, and the only one that is good for PSP.

Jeanne D'Arc is good, and recognized by many game critics. Pick up Dissidia FF, if you are a big fan of FF series and like to see'em heroes from I to X duke it out! Castlevania: Dracula X Chronicles will satisfy in either ways: the hardcore gamer that remember the NES/SNES series, or the SotN that got new fans (with better translation!) - FYI, I'm the later.

You can't go wrong with games that are listed here.

Or you could re-buy a DS system and the DS version of Space Invaders Exteme and import the TAITO Paddle controller from Japan!

Then again just as a question if anyone knows, does the PSP version support a TATE mode?

Don't think so, only psp game I've seen in TATE is Star Soldier. If you know more let me know.

The thing that bugged me with the ds version was the space between screens, died several times because of that. The psp version just felt more natural, and looks a whole lot better.

I've found a lot of devs don't like to compensate for that space. Metroid Prime Pinball did so and it was an awesome experience. But I've played several games where they treat the two screens as if they were right next to each other, which really throws off your timing.
