From what I've read online it seems that the stock screen can be replaced with one from later models, and I'm willing to go through the hassle of dismantling the thing if it means a much larger HDD.

Oh, its definitely worth it. Its just kind of a pain is all haha. I upgraded the hard drive in mine but never had the screen to try out that upgrade. If you don't mind the relatively slow speeds of the clamshell then they are worth looking into. Practically invincible.
With Sega Saturn nothing else matters!
